Consultant Quality Management – Green Tea Production and Processing

DGRV – the German Cooperative and Raiffeisen Confederation is the national apex organization and top-level auditing confederation of the cooperative sector in Germany. Since more than 30 years, DGRV is involved in international development cooperation aiming on the sustainable development of the cooperative sector worldwide.

In Vietnam, DGRV supports the transformation and development of the cooperative sector by providing cooperative expertise, long and short-term consultancy, as well as tailor-made solutions for international development projects. The overall objective of the assignment is to provide an on-site training module for tea farmers on the topic of “Quality Management/Control – Green Tea Production and Processing.

Position advertised: SHORT TERM CONSULTANT QUALITY CONTROL AND MANAGEMENT IN TEA CULTIVATION AND PROCESSING

Objectives: Development of a training module (including development of handouts, a power point and human sensory test training to participants) on the topic of quality control and management in green tea production and processing.

STANDARD TERMS OF REFERENCE FOR TRAINING CONSULTANTS

In Vietnam DGRV´s primary objective is to contribute to the sustainable development of the cooperative sector by capacity building in terms of training, tailor made consultancy and knowledge sharing. The overall objective of the Program aims to enhance the capacities of Vietnamese cooperatives and cooperative federations in order to improve the economic and social structure of the cooperative economy and cooperatives in Vietnam.

  1. TERMS OF REFERENCE:

This Standard TOR lays out the framework for the collaboration of DGRV and the Consultant in developing training activities. Detailed scope of work shall be elaborated in the following enumeration which will be an integral part of the TOR.

  1. CONTENT AND OBJECTIVES

1. Quality control training course on green tea production and processing (4 days)

a.    Product quality and impacted factors

- Why is it important to improve the product quality?

- Product quality: Concept and indicators

- Impacted factors: Seedling, fertilizers application, harvesting, climate, processing techniques, packaging, storage

- Overview of processing techniques for different types of tea

- Common problems of green tea products

b.   Logical framework of human sensory test

- Human sensory test of food in general

- Standard TCVN 3218:2012 – Tea human sensory test by presenting mark

c.   Human sensory test

- Green tea: Appearance, Color of liquid, Aroma, Taste, Fermented tea

- Black tea, Oolong tea, White tea

- Human sensory test Team

- Skills of team members

d.   Classification of tea products

- Overview of tea products classification

- Green tea: different types of products

- Other works: sampling, dealing with the mixed tea, re-drying of tea, etc.

  1. Processing techniques – practical module (1 day)

- Introduction into different tea processing techniques and their characteristics

 

Objective of the training:

      • Participants of the training get an understanding of quality control in tea production and processing; they understand why it is important; how they can benefit from it; and how to practically apply quality control measures

      • Further participants are aware of human sensory test and how to perform it

      • Participants are able to classify and evaluate different tea qualities

      • Participants know of different tea processing techniques and their pros and cons

  1. TRAINING MATERIALS DEVELOPMENT

  • The Consultant shall develop and perform a 5-day training course on the mentioned topic for tea farmers/members of a tea cooperative

  • The Consultant shall have to submit the training material outline to DGRV according to the TOR. After the outline has been approved by DGRV, the Consultant will start drafting the materials and submit to DGRV. DGRV will then review the work.

  • Materials developed by the Consultant are subject to review by the program manager/other DGRV team members and the Consultant shall be responsible for making changes/ amendments to the materials as recommended by the team.

  • The materials shall be in Vietnamese and English presentations have to be in the form of PowerPoint slides with speaker’s notes that enable others to deliver the presentation on behalf of the author. The contents should be clearly understandable so that the trainees could use them as self-study reference materials.

  • DGRV shall retain ownership of all patents and copyrights for intellectual properties created as the result of this Consultant Agreement, either in part or in whole. In the case of copyrighted materials created as a result of this Consultant Agreement, DGRV shall grant to Consultant a nonexclusive, royalty-free right to use, publish, reproduce or distribute those materials for educational purposes.

  1. MATERIAL INTEGRATION & ADAPTATION

    • Materials from foreign sources will need to be adapted to Vietnamese conditions before getting delivered to Vietnamese audience. The Consultant shall carry out such tasks.

    • All materials must be approved by DGRV Hanoi project office. All approval will be coordinated by the DGRV staff.

  • PowerPoint presentation and handouts for participants

  • Practical examples on human sensory test

  • 5-day on-site training in the field in a province outside of Hanoi

  1. QUALIFICATIONS

  • University degree or equivalent agricultural or agricultural economics with focus on tea production and processing and 5 years relevant work experience preferable some years in Vietnam

  • Very good communication, presentation and facilitating in Vietnamese and English

  • Ability to prepare training materials, conduct and formulate training, workshops, campaigns and tools

  • Evaluate training effectiveness to ensure training outcome

  • Good skills of MS office software (Word, PowerPoint, Excel etc.)
